Depression Era Potato Soup Recipe
welcome friends it is Sunday morning sowe're going to do another one of the
post Depression pre-world War tworecipes and this time out of the Elm
Vale community cookbook and today we'regoing to make potato soup and I think
this recipe falls into the category thatmost people want to believe is a
depression-era recipe in a lot of thecomments sections I get comments like oh
these people must have been rich thiswasn't depression-era cooking where did
they get all of this meat and thevegetables and so on and so forth and
you have to remember that elm Vale in1939 when this was published was a very
rural community Elm ville in 2019 isstill a very rural community so these
people lived on farms they would havehad access to better food than anyone
living in the city times are still tightand a lot of stuff they would have done
withoutand I think this recipe is one of those
do without recipes so on this plate I'vealready got some peeled and chopped up
potato and appealed and chopped up onionand that just goes into the pot and the
recipe says just cover with water bringto a boil and simmer until tender okay
so it says not to drain and just mash itup so I will mash it up and I don't know
how fine to mash it I think I still wantchunks of potato and onion visible so
I'm gonna be very careful now you coulduse a stick blender but I think that
might be too smooth okay now it says toput in some butter so I'm gonna start
with that much butter maybe about atablespoon and then salt and pepper to
taste so you know see what you liketaste it put some in stir it in cook a
little bit put a little bit more in it'sreally up to you for the seasoning I
guess now the last ingredient is milk
it says to put a quart of milk in and Idon't know if I'm gonna need that much
because I put the lid on while I wasboiling the potatoes and I think they
might have expected a little bit morewater to have evaporated during the
boiling process because this seemspretty thin
I don't know that'll put any more in Ithink I'm just gonna leave it like that
so let's give it a taste and see ifwe've got the spicing right as much as
there is spicing in it use a little moresalt and a little bit more pepper
since I finished that bag of milk it'smy responsibility to put in a freshman
okay so I'll give it one more taste andwe'll see where we stand
definitely gonna put in this secondtablespoon of butter we'll see what
happens

yeah it looks fairly simple it is fairlysimple um so yeah but it's very pleasant
very pleasant it is it it it is pleasantbut I can see how this is a depression
or a recipe from maybe when times werereally tough or for a family where it
was really tough yeah it's a bit watereddown yeah it's a bit watered down you
could there are other dia a little lesswater yes so I could boil my I could
boil it with the lid off which wouldhave concentrated the flavour to celery
wouldn't have been available year-roundto most people they would have had it in
the summer time but you know NovemberDecember they wouldn't have it now you
could add vegetables to thisI think celery carrots yeah chocolate
carrot would be really nice in this insalary would round out the flavor
mushrooms if you know what season someanimals are this asked for milk but I
think I would put today I would putcream in it to kind of thicken it and
give you more than just some right fromthe cow that that's true which would
have made it which would have made itmuch creamier yes so has been the the
like the 2% 3% thing that we all yessodium is it has all the fat removed so
I use 3.25 you're going to cheese somecheddar cheese I mean everybody would
have had cheddar cheese and I'm surepeople would sprinkle this on top maybe
some even some chives yeah um parsleyparsley on top just too
so does a depression-era soup it's alittle thinner than you'd expect it's
got some basic ingredients that you cankeep around all year round but it's a
great starting point it is it's a greatstarting point to then build a soup into
whatever you want it it is a lovely baseit's got its got cream it's got potato
it's got onion it's gonna base flavorthat you can grow in whatever way you
house would be great matzo you couldtake this put in your own bias of what
you think is tastydo you like just a little bit of cheddar
starts to round it out a little bit glamcorn and bacon corn and bacon because
you know thick and cheese what else whatother what other cliche could we add to
it okay so in bacon so so here's whatwe've come to this is a depression-era
soup from sort of the lower end of thesocio-economic strata press a hard times
hard times this is a hard time soup butyou could take this today as a starting
point and just go nuts with it and youhave your starting with a really good

This time out of the Elmvale community cookbook and today we're going to make a Potato Soup Recipe. As we found out - this is a great starting point for all kinds of flavour additions. Ingredients: 8 medium potatoes, peeled and cut up 2 small onions, cut up Salt and pepper to taste 1Tbsp butter 1 quart milk Method: In a stock pot place the potatoes, onions, and just enough water to cover. Boil until potatoes are soft. Mash without draining, add butter, milk, and salt & pepper to taste.
